Carboniste Pet Nat of Pinot Grigio
This extra-brut style of Pet Nat from Carboniste is incredibly clean and mineral driven. Pinot Grigio grapes are picked early to maintain high acidity after fermentation - the finished product is under 12% alcohol. This neutral sparkler gains some complexity from that wonderful yeast still in bottle, but is otherwise very fresh and pure. This is a food friendly Pet Nat that won't fight much at the table
